Bolognese is one of the basic pasta recipes. On the one hand, it is very simple, but on the other, it leaves room for variations and improvisation. This dish can be ideal for a quick bachelor dinner, and for receiving guests (lovers of arthouse cinema may at this moment recall a scene from the movie "Adele's Life"). And you can cook it accordingly - super-fast, or after spending a little more time. You can make bolognese sauce with any kind of low-carb pasta, but in my opinion, it goes best with black spaghetti - if only because, "firstly, it's beautiful."

Here is the most minimalistic speed variation that I myself prepare most often:

Serves 4.

  • 1 pack of any O Keto pasta
  • 300-500 g mixed minced meat: beef plus pork
  • 500 g of chopped or chopped tomatoes
  • butter - 50 g
  • olive oil for frying (you can use coconut oil, ghee, and lard, but olive oil is a classic)
  • salt, pepper, dried or fresh basil

Heat a skillet over medium heat, add olive oil, add minced meat and vigorously crush it with a wooden or plastic spatula. Fry the minced meat, stirring occasionally. When you feel that the minced meat is fried, pour the tomatoes into it, stir, bring to a boil and simmer over low heat under the lid for another 10-15 minutes. Add butter, let it melt, season with salt, pepper, basil, or other spices and seasonings to taste.

In parallel, you can boil pasta according to the instructions on the pack. Then there are two options: you can put the pasta on a plate, sprinkle it with olive oil and put the sauce on top. Or you can mix the pasta with the sauce in a saucepan and simmer everything together a little.

Serving, you can sprinkle the spaghetti with grated parmesan (we remember about the sanctions, but they are not everywhere and not forever?), Or any other grated cheese to taste, and also garnish with fresh basil.

If you want a more "advanced" version, then you need to add a few more ingredients from among the following:

  • Carrots - 1 medium
  • Onion - 1 medium onion
  • Celery - 2 stalks
  • Garlic - 2-3 cloves
  • Bacon - 100 g
  • Red wine - 1-2 dl
  • Chili sauce
  • meat broth cube
  • Fresh tomatoes - 2-3 pieces
  • Some more spices

It is not necessary, of course, to add all of them - it's all a matter of taste, you can choose any subset to your liking.

Finely chop the bacon, celery, garlic, tomatoes and onions, and grate the carrots. First, fry the bacon in olive oil, then add the onions, carrots, celery, garlic and sauté everything until the onions are golden brown. After that, put the minced meat in a frying pan, fry it, stirring vigorously. When the minced meat is fried, pour the tomatoes, wine, add fresh tomatoes, put the bouillon cube. If you add wine, then you can put a little less tomatoes so that the sauce does not turn out to be too runny. Bring everything to a boil, season with salt and pepper, add spices and butter. After that, reduce the heat and leave to simmer under the lid for as long as you have enough patience: from 20 minutes to an hour and a half. Stir occasionally.

But this is not all, various unexpected options are also possible. For example, Alena Vinogradova likes to add fried zucchini to bolognese. This, of course, is a deviation from the canon, but still very tasty. Go for it!

Calculation for the minimum version with 500 g minced meat and black spaghetti:

Proteins - 199 g (32% kcal) Fats - 182 g (62% kcal) Carbohydrates - 37 g (6% kcal)

The answer to a frequently asked question: dl is a deciliter, i.e. 1/10 liter, or 100 ml, or half a glass.
